I found this recipe on my friend’s Angela’s blog and wanted to try it — but I didn’t have some of the ingredients on hand on so I adapted it a bit for our liking and it was delicious!


First, I made my own Turkey “Sausage”. I browned up 1.5lbs of lean ground turkey. Then added the following seasonings:


  • 1 tablespoon red wine vinegar
  • 1.5 teaspoons Italian seasoning (or equal parts dried basil, oregano, and thyme)
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon packed light brown sugar (optional, but recommended)
  • 1/2 teaspoon paprika
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground or whole fennel seeds


Ingredients for rest of casserole:

1.5lbs lean ground turkey

1 head cauliflower

1 bag of frozen 3 pepper and onion blend(could use fresh onion and pepper too)

1 can of no sugar added tomato sauce

1 cup of italian blend shredded cheese

1 tsp of oregano

5 cloves of garlic, minced

1tsp thyme

salt and pepper to taste

1 tsp red pepper flakes
While the turkey was browning, boil a pot of water. Break up a head of cauliflower and boil for 3 minutes, then remove from heat and drain. Preheat oven to 350.

When turkey is browned, add the sausage seasonings and mix well. Then, add in frozen bag of peppers/onions, oregano, garlic, salt and pepper, thyme and red pepper flakes. Saute for 3 minutes then add tomato sauce. Saute until heated thoroughly.

Mix in cauliflower.

Transfer to 9X13 sprayed baking dish. Bake at 350 for 15-20 minutes. Then add cheese on top and bake for another 5 minutes, then broil for 2-3 minutes until bubbly and brown.


My kids even ate it! Yum!
