This meal was super yummy and delicious! I will definitely make it again!

SERVES: 6

INGREDIENTS:

1.5lb chicken breast, grilled and diced

1 can of no sugar added tomato sauce

1 green bell pepper, diced

1 red bell pepper, diced

1 small white onion, diced

1 glove garlic, minced

1 tbsp garlic powder

1 tsp hot sauce

1 tsp red pepper flakes

dash of salt and pepper

1 medium sized spaghetti squash, cut, roasted and seeded

1 cup of shredded cheese – I preferred sharp cheddar

 

INSTRUCTIONS:

Preheat oven to 375.

Cut spaghetti squash in half, scoop out seeds. Place face down in 1inch of water in a 9X13 dish and bake in oven for 40 minutes OR cook in microwave for 15 mins or so, until squash can be easily shredded like noodles.

While squash is cooking, saute onion, peppers, garlic, spices, until cooked. Then add tomato sauce and hot sauce and simmer.

In a 9X13 dish, mix squash with tomato sauce and pepper mixture. Mix well and spread in dish evenly. Top with shredded cheese. Bake for 20-25 mins until bubbly.

 

FIX CONTAINERS: serves 6. each serving is 1 red, 1 green, 1 blue.
