Turkey Tamale Pie (21 Day Fix approved and Gluten Free)

My husband tells me that one of his favorite meals growing up was his mother’s tamale pie.. so I had my work cut out for me to make a healthy version.:) We had leftover turkey breast from Thanksgiving so I decided to give this a whirl and it was SO good! I ate leftovers for lunch the next day too!!

Serves 6


1tb of ground turkey or cooked shredded turkey breast (you could also sub in chicken breast)

1 can diced tomatoes

1 small can of tomato sauce

1 green pepper, sliced

1 onion, diced

1/2 red pepper, sliced

1 cup cornmeal (I simply took plain popcorn kernels, blended them in my vitamix until they were a fine powder) = cornmeal.

2.5 cups water

1tsp chili powder (gluten free)

1tsp salt

1tsp red pepper flakes

1 cup frozen corn kernals

1/2c shredded colby jack cheese

optional, diced jalapeno with seeds out



Preheat oven to 375.

In a large skillet, brown turkey if not cooked; add in tomatoes, tomato sauce, red pepper flakes, chili powder, peppers, jalapeno, frozen corn, 1/2tsp salt. Cook thoroughly.

Make your cornmeal if you are making your own. In another saucepan, boil water. Add cornmeal and 1/2tsp salt. Stir and simmer for about 5 minutes until thick. Add in cheese. Mix well.

Spray a 9X13 baking dish. Add in turkey/veggie mixture. Top with cornmeal topping. Spread evenly.

Bake for 40-45 minutes. Slice into 6 equal portions.
